The Prettiest Thing In My Pantry

Several years ago, while scrolling through Pinterest, I came across a photo of the prettiest bright pink vinegar I’d ever seen. It was made with chive blossoms, and I remember thinking, “I have chives…I wonder if I could do that?”


So I did.


That one little project has become one of my favorite spring traditions.


Every year I wait for my chives to bloom, then I head out to the garden with a jar and gather the blossoms just after they’ve fully opened. A few weeks later, what started as clear vinegar has transformed into the most rosy pink.


I still catch myself picking up the jar every few days just to see how the color has changed.


What surprises me most isn’t just how pretty it is. It’s the flavor. The vinegar mellows, the chive aroma develops, and suddenly you have something perfect for homemade salad dressings, roasted vegetables, marinades, and so much more.


Of course, once I realized how easy it was, I couldn’t stop with chive blossoms.


Herbs, berries, citrus peels, garlic, peppers, and edible flowers can all be used to make delicious flavored vinegars. Every season brings something new to experiment with, and every batch is a little different.
